Puff Pastry Pizza Pinwheels- Simple Lunch Box Ideas

If you’re a parent, you likely have or know a fussy child who simply does not like sandwiches, making packed lunches a daily battle.

Our super simple puff pastry pizza pinwheel recipe is a guaranteed crowd pleaser whether for a packed lunch box, an after school snack, a quick and easy dinner on the go or even served up at a birthday party.  The great thing is you can easily adapt the recipe to suit different tastes. You can add extra toppings or swap the base for pesto, and switch out cheddar cheese for feta to make super tasty treats that can be whipped up in minutes.

 

An Aga, or other cast iron cookers, is renowned for its capabilities of baking crisp pastry. Use the bottom of the roasting oven on a traditional Aga or place the shelf on the bottom of the top oven on an ElectricKit Aga for zero soggy bottoms.

Ingredients:

  • Ready roll puff pastry
  • 1 tbsp Tomato puree
  • Cheese - we used a cheddar and mozzarella mix
  • Pepperoni slices

 

Method:

  1. Simply roll out the sheet of puff pastry and spread over the tomato puree, leaving a 1 inch border.
  2. Generously sprinkle the cheese over the pastry.
  3. Add the pepperoni slices on top.
  4. Roll the pastry into a long sausage and slice evenly into 8-10 pinwheels.
  5. Place on a baking sheet and brush lightly with beaten egg or milk.
  6. Cook for 20mins at 200c with the shelf on the bottom of an ElectricKit Aga or ESSE electric range cooker, until golden brown. Or bake on the floor of the roasting oven on a traditional Aga.
  7. Remove from the oven and sprinkle more cheese on top and place back into the oven for a further 5 minutes until the cheese is golden brown.
