Mediterranean Savoury Muffins

Ingredients:

  • 150g cheddar cheese

  • 75g feta - crumbled

  • 1/2 cup green olives, sliced

  • 1/2 cup roasted red peppers

  • 1/2 cup spring onions

  • 1 egg

  • 1 cup (250ml milk)

  • 1/4 cup (60g) sour cream

  • 60ml vegetable oil

Instructions:

  • Pre-heat the electrickit advanced oven to 180 °C. Grease a 12-hole muffin tin with butter or oil.

  • In a large bowl, whisk together flour, baking powder, baking soda and salt.

  • In a separate bowl, whisk together the egg, milk, sour cream (or yoghurt) and oil.

  • Pour the wet mixture into the dry ingredients and stir just a few times — enough to combine but avoid over-mixing.

  • Gently fold through the cheddar, feta, olives, spring onions and roasted peppers.

  • Spoon or scoop the batter into the prepared muffin tin, filling each well almost to the top.

  • Bake for about 22–25 minutes, or until the muffins are golden and spring back when touched in the centre.

  • Let them cool slightly (or brush the tops with extra butter if desired), then enjoy warm. If you’re saving them for later, they can be frozen for up to 3 months.
