Ingredients:

150g cheddar cheese

75g feta - crumbled

1/2 cup green olives, sliced

1/2 cup roasted red peppers

1/2 cup spring onions

1 egg
-
1 cup (250ml milk)

1/4 cup (60g) sour cream

60ml vegetable oil
Instructions:

Pre-heat the electrickit advanced oven to 180 °C. Grease a 12-hole muffin tin with butter or oil.

In a large bowl, whisk together flour, baking powder, baking soda and salt.

In a separate bowl, whisk together the egg, milk, sour cream (or yoghurt) and oil.

Pour the wet mixture into the dry ingredients and stir just a few times — enough to combine but avoid over-mixing.

Gently fold through the cheddar, feta, olives, spring onions and roasted peppers.

Spoon or scoop the batter into the prepared muffin tin, filling each well almost to the top.

Bake for about 22–25 minutes, or until the muffins are golden and spring back when touched in the centre.

Let them cool slightly (or brush the tops with extra butter if desired), then enjoy warm. If you’re saving them for later, they can be frozen for up to 3 months.
