Easy Aga Flatbreads and Wild Garlic Dip

A simple recipe for a tasty dip, accompanied by a very easy to make flatbread which uses only two ingredients. 

This recipe uses wild garlic, which is abundant between March and June. It can often be found in shady woodland areas or near streams. It is popular among foragers and cooks for its familiar garlicky smell and taste, and its versatility, with all parts of the plant used in cooking.

Most cooks tend to favour the leaves, which are the perfect addition to salads, soup and stews, or can be blitzed to make garlic pesto or dips.

Tips for Picking Wild Garlic

  • It can be identified by its large broad green leaves and white pom pom flowers. But its strong garlic scent is the best way to identify it. If in doubt then leave it.

  • Pick away from paths or roads and select leaves from higher ground and wash thoroughly before cooking with it.

  • Forage responsibly - do not dig up bulbs, only take what you need and ensure you have landowners’ permission if on private land. If in doubt, check foraging guidelines online before you go looking.

Simple Wild Garlic and Feta Dip with Simple Aga Flatbreads

50g wild garlic leaves

100g feta cheese

100g greek yoghurt

Zest of one lemon

1 tbsp fresh chives

  • Wash and dry the leaves before roughly chopping.
  • Add all the remaining ingredients into a bowl and blitz with the wild garlic leaves.
  • Season to taste.
  • Serve with our Aga Flatbreads. This is another simple recipe that requires only two ingredients. This flatbread recipe is perfect for cooking on the Aga hotplate. 
  • Simply mix 250g of self raising flour with 250g of greek yoghurt. Combine to form a dough. Rest the dough for 20 mins before separating into 8 small balls (to make 8 flatbreads). 
  • Roll thinly and cook directly on the Aga boiling plate (Electrickit set to 5 or 6). Cook for 20-30 secs until golden brown, before flipping.
  • If using a conventional oven, pre-heat your pan to a high temperature.
