Ingredients for Classic American Chocolate Chip Cookies

  • 225g unsalted butter, softened
  • 150g caster sugar
  • 165g soft dark brown sugar
  • 2 large eggs
  • ½ tsp bicarbonate of soda
  • 1¼ tsp kosher salt (or 1 tsp fine sea salt)
  • 1 tsp vanilla extract
  • 560g plain flour
  • 170g milk chocolate chips
  • 115–170g dark chocolate, roughly chopped
  • Sea Salt flakes, for finishing

How to Make Chocolate Chip Cookies in an Aga

  1. Place the softened butter, caster sugar and dark brown sugar into a large mixing bowl and beat together for around one minute until just combined. There's no need to overwork the mixture; keeping the creaming light helps create a chewy texture.
  2. Add the eggs one at a time, mixing until smooth after each addition. Stir in the bicarbonate of soda, salt and vanilla extract until combined.
  3. Fold in the flour, followed by the milk chocolate chips and chopped dark chocolate.
  4. Chill the cookie dough in the fridge for 30 minutes. This firms the butter, preventing the cookies from spreading in the oven.
  5. Preheat the roasting oven of your ElectricKit Aga to 180°C. Line a baking tray with baking parchment or a Bake-O-Glide sheet.
  6. Form small cookie dough balls and place them onto the prepared tray, leaving approximately 5cm between each cookie to allow for spreading. Sprinkle each one with a pinch of sea salt flakes.
  7. Bake for 7–8 minutes, until the edges are lightly golden but the centres still appear slightly underbaked. Don't worry – they'll continue to cook as they cool.
  8. Leave the cookies to rest on the baking tray for 5 minutes before transferring them to a wire rack to cool completely...if you can resist eating them warm!

Top Tips for Baking Cookies in an ElectricKit Aga

  • Chilling the dough before baking helps prevent excessive spreading and gives a thicker, chewier cookie.
  • For bakery-style cookies, press a few extra chunks of chocolate into the tops of the dough balls just before baking.
  • A light sprinkle of sea salt perfectly balances the sweetness and enhances the chocolate flavour.
  • Bake in batches rather than overcrowding the tray so the cookies have room to spread evenly.
  • Every Aga cooks a little differently, so keep an eye on the first batch and adjust the baking time by a minute if needed.

Why Bake Cookies in a Cast Iron Aga?

Cast iron cookers have long been renowned for their baking performance. The cast iron gently absorbs and radiates heat, creating a stable cooking environment that helps biscuits, cakes and pastries bake evenly.

With a controllable ElectricKit Aga, you enjoy those traditional cast iron baking qualities alongside the convenience of independently controlled ovens. Being able to select the ideal baking temperature means you can achieve beautifully consistent results while still enjoying the unique character of cooking with cast iron.

Can You Freeze Chocolate Chip Cookie Dough?

Absolutely. Shape the cookie dough into balls and freeze them on a tray before transferring to a freezer bag or airtight container. They'll keep for up to three months.

Bake straight from frozen, simply adding an extra 2–3 minutes to the baking time. It's a brilliant way to enjoy freshly baked cookies whenever the craving strikes.

How to Store Homemade Chocolate Chip Cookies

Store your cookies in an airtight container at room temperature for up to five days. To keep them wonderfully soft, add a slice of bread to the container — the cookies absorb moisture from the bread, helping them stay fresher for longer.

If you'd like to recreate that fresh-from-the-oven experience, warm each cookie in the roasting oven for a minute or two before serving.
